[b]If you are planning an event and need a simple inexpensive dish or just want to add something extra to serving small chops, outside the cliché of spring-rolls, samosa, or mosa, you might consider going with beef skewer a.k.a stick meat. Preparing beef skewer is easy and here is how to go about it.
Ingredients of Beef Skewer
1kg beef, best boneless, fresh and with little or no fat
5 large green bell peppers
3 red bell peppers
3 plum tomatoes
1 medium sized cabbage or a bunch of lettuce
2 large onions
2 teaspoons each curry, thyme and garlic powder
Ground chilli pepper to taste
Stock cubes and salt to taste
Wooden skewers or sticks will be required
Pre-preparation of Beef Skewer
Wash meat till the water is bloodless
Cut into little bite sized cubes
Marinate meat by rubbing all-over with spices, salt and chilli. If available a splash of vinegar or white wine would infuse the spices better
Refrigerate or freeze overnight to marinate properly. If unable to do this, refrigerate for about 2 hours.
Wash all vegetables thoroughly under running water. You can also wash in salted water or water with a bit of vinegar, to kill germs and prevent food poisoning.
Remove seed from peppers and slice vegetables into small squares or rectangles.
Making The Skewered Beef Sticks
Pour meat with marinade in a pot and cook at low-medium heat. Add salt or any additional seasoning to taste, if necessary. Do not add any water unless absolutely necessary.
Cook till beef changes color and loses all redness. Turn flip the beef for uniform cooking. Make sure all juices are absorbed.
When meat is well cooked, deep fry in about 3 inches of vegetable oil.
Lightly Stir-fry veggies in about 2 tablespoons of oil, for just about 1 minute on medium heat
When meat is evenly fried, strain if excess oil in a serviette/paper towel-lined sieve
Arrange your cubes of meat and veggies on your skewers in a colourful array of your choice.
